Organoleptic characteristics
Briccole has a brilliant ruby red sheen, with fruity aromas on the nose and hints of black cherry and blackcurrant. On the palate the same notes blend into a harmonious wine, endowed with good structure, enveloping and persistent.

Gastronomic combinations
It goes well with first courses, compound dishes with vegetables, and fresh cheeses. Ideal with classic Tuscan Ribollita soup. Taste at 18-22°C, uncorking the bottle a few minutes before.

Two years ageing in French oak barrels endows Briccole Riserva with a complex bouquet and shapes its structure and body. Harvesting and vinification
The grapes are harvested manually and, after destemming and soft crushing, the maceration lasts for 15 days in cement tanks with controlled temperatures. After the maceration, the wine reposes in barrels of 500 litres. The traditional vinification process of topping-up the barrel and careful bâtonnage stirring makes the fusion between wood and grape aromas softer and more elegant. The wine is then aged in the bottle for at least four months.

Organoleptic characteristics
Briccole Riserva has an intense ruby red colour. The aromatic blend includes undertones of blackberry and ripe cherry, together with notes of chocolate and suggestions of coffee. A finely structured and full-bodied wine, soft and elegant on the palate.

Gastronomic combinations
It performs admirably with roasted or grilled meats and mature cheeses. A classic with Florentine steak. Drink at 18-22°C, opening the bottle half an hour before.

The grapes are harvested manually at different times, depending on their ripeness. After destemming and soft crushing, the maceration lasts for 18 days in steel tanks, with controlled temperatures. The wine matures for 18 months in French barriques, after which it continues ageing in the bottle for another three months.

Organoleptic characteristics
Intense ruby red in colour, Ghirigoro has red-berry fruit aromas with spicy hints. On the palate the full taste of red fruit emerges, in perfect harmony with subtle vanilla notes. A well-structured wine.

Gastronomic combinations
It goes excellently with savoury first courses, game, and cheeses that are matured, blue or aged in pits. A truly gourmet option is to serve with Florentine tripe. Taste at 18-22°C, uncorking the bottle several hours before.

VINSANTO DEL CHIANTI

This fine wine, typical of Tuscan tradition, starts with a meticulous selection of the best grape bunches. After drying on canes, the grapes are gently pressed and the must is stored in small oak or chestnut barrels. After 8-10 years, the Vinsanto finally sees the light of day, in an explosion of amber reflections and warm aromas. Produced in very few bottles, it is dedicated exclusively to people devoted to truly authentic pleasures.

Harvesting and vinification
The grapes – in colours ranging from brown to pink to amber – are carefully selected during the harvest and picked by hand when they are at peak maturity. The grapes are then left to dry in a well-ventilated room on typical cane structures where they remain until early January, when the imperfect grapes are removed from the bunches. With a small manual press the grapes are then gently pressed and the resulting must is poured into small oak or chestnut barrels, where it ferments and matures for 8-10 years before being bottled.

Organoleptic characteristics
Dedicato has an amber hue flecked with golden reflections. On the nose, sweet fragrances of dried fruit, nuts and acacia honey, all also found in the mouth enlivened by spicy notes. Persistent and robustly structured, pleasurably sweet, it leaves the palate satisfyingly clean.

Gastronomic combinations
Superb accompanying mature cheeses, dry pastries and dark chocolate. In Tuscany, it is traditionally drunk with cantuccini almond biscuits. Taste at 10-15°C.
